  • THE “CERTOSINO” CAKE Carthusian (Certosino) order is a very strict monastic order of the Catholic Church; it was founded by St. Bruno in France. He and his monks looked for loneliness to vote themselves to a contemplative life. The monks in St. Lawrence Carterhouse in Padula, on the outskirt of Salerno, have made a new pie to be served to the pilgrims during St. Lawrence Fair. Here is the recipe: Ingredients: • 3 eggs • 125 grams almonds • 125 grams nuts • 125 grams dried figs • 250 grams raisins • 125 grams flour • 120 grams sugar • 1/2 lemon • 25 grams yeast • 1/4 teaspoon cinnamon powder • 1 spoon of rose water How to make it Roughly mince almonds and nuts, cut figs in small pieces. Add the raisins, previously drenched in warm water for 15 minutes. Then add lemon juice, sugar, flour, yeast, cinnamon and eggs. Mix accurately all the ingredients. Put the mixture in a rectangular pan , previously greased. Let the mixture rest for 2 hours, then put it in a hot oven for 30 minutes at 150° C. Serve it cold.
