The old cake of Brač
Ingredients:
12 eggs
300 g of sugar
1 orange
500 g of ground almonds
1
of Maraskino(almond liqueur,we will bring it)
5 spoons of milk and 100 g of chocolate and and 1 spoon of butter for the icing
Method of preparation:
Whisk eggs and sugar,add orange juice and orange zest,Maraskino,almonds and whisked egg whites.Pour the mixture into a cake mould of around 29-30 cm.
Bake the cake in a preheated oven(200 centigrades).The cake is baked for about 60 minutes. After first 10 minutes,you should reduce the temperature a bit and bake it on 150 degrees for the last 30 minutes.Don't cut the cake when it is baked.
The icing:
Melt the chocolate with milk on steam,remove from the heat to get a smooth mixture and add butter.Pour the icing over the cake and leave it that way.Using peeled almonds and orange zest to make decorations or adorn it with fresh flowers
A chocolate wonder
Ingredients for the sponge:
4 eggs
10 decagrams of sugar
20 decagrams of margarine
10 decagrams of cooking chocolate
4 spoons of soft flour
1 raising agent
Cream:
½ litre of sweet cream
20 decagrams of cooking chocolate
1 spoon of sugar
Method of preparation:
Whisk margarine and sugar. Add eggs, melted chocolate and sifted flour mixed with raising agent. Smear the mould with some grease and sprinkle with flour. Bake the sponge at 180 degrees for 20 minutes. Remove it from the mould and pour the cream on top of it.
Chocolate crinkles
Ingredients:
2 eggs
60 g of butter
100 g of sugar
200 g of dark chocolate(55 % or more cocoa)
1 tea spoon of vanilla extract
200 g of soft flour
1 tea spoon of raising agent
A bit of salt
Granulated sugar and caster sugar (about 100 g) for coating
Preparation:
Chop chocolate and melt it over steam or in a microwave, and leave it to cool a bit. Sift flour, a pinch of salt and raising agent.
Whisk butter left at room temperature with sugar and vanilla extract. Add melted chocolate and whisk it to get a uniform mixture. Add one by one egg, but don’t whisk it long, just enough to blend everything.
Add flour to the mixture and mix it well. Cover it and leave it in the fridge for at least 3 hours or overnight.
Turn on the oven at 180 degrees.
Using a spoon, take out the mixture and form balls using your hands. They should weigh around 10 g.
Put granulated and caster sugar into two bowls. Roll each ball into granulated sugar first and then sprinkle it with caster sugar.
Arrange balls onto a baking tray in a way that they don’t touch each other. Cover the baking tray with baking paper. Bake them in a preheated oven for 8-10 minutes. They have to still be soft when you get them out.
Take them out of the baking tray, let them cool and enjoy them.
