Pressing the grapes in Acharnes

  • A winemaking effort It was with great joy and special interest that students learned about vinification and then applied their knowledge by preparing their own wine on Thursday 11/10/2018 at school, the 1st gymnasium of Acharnes. The teachers of the pedagogical team reported the stages of winemaking and explained to them what each of them included. Vinification stages A) Harvesting the grapes. It can be done in different months depending on the area. What is necessary is that the grapes are sweet. B) Pressing the grapes - breaking of the grape. Cut the berries from the bunches and remove the damaged ones in order not to affect negatively the quality of the wine. Then we step on the grapes with feet that must be clean or with hands until their juice comes out. C) Production of must. Push the grape pulp that we made and remove the must. D) Alcoholic fermentation. The must is placed in the pot of alcoholic fermentation and stays there at a temperature of about 18 degrees Celsius. E) Storage and maturing of wine. When the fermentation is complete, we put the wine in a sealed container and let it mature. After the theory, the act began to be performed with great zeal. After washing the grapes, the students removed the bunches and held only the berries in large basins. They wore gloves and began to press the berries with their hands until all the juice came out. When this job was over, the strainer separated the juice from the peels and the must was placed in a wooden barrel. With a special gauge, a musometer measured the sugars of the must. Then we all tasted the must, who tasted good and wished "καλά κρασιά!". The joy of the children was indescribable. Now we are excited to see if our attempt is successful when the time will come.
