    BULGARIA

    Traditions and national holidays are much loved and revered in Bulgaria.

    A traditional dessert that is prepared for the holidays is Baklava. It is mandatory to have it on the Christmas table, but it is often prepared on other occasions. Here is the step-by-step recipe. The baklava we present to you was prepared by Lily from 5th grade and her grandmother.

    BAKLAVA (Баклава)

    Required ingredients:

    * Baklava crust - 0.5 kg / 1 package

    * Butter – 250 g.

    * Ground Walnuts - 2 cups.

    For syrup you will need:

    * Sugar - 3 cups of water

    * Water - 3.5 water glasses

    * Lemon Juice - 1 teaspoon

    Method of preparation:

    The ideal baklava is the one prepared with a lot of desire and love! It is crispy with perfectly distributed nuts, moderately syrupy, and the number of crusts used to make it should be odd – around: 19, 21, 23, 25, 27, etc.

    Take a round pan and grease it nicely with pre-melted butter.

    Put the first crust. Here it is very important to emphasize that the crusts should be perfectly thin, so if you do not make them at home - we recommend that you buy ready-made crusts. After putting the first crust, spread oil on it again and put the next crust on it, which you spread with oil again. So you put 3-4 peels, and already the 4th, 6th and 8th sprinkle additionally with a handful of walnuts. ie butter is spread on each crust and walnuts through one crust. In this way the baklava will be crispy and the walnuts will be perfectly distributed. Fill the pan to the top.

    After putting the last crust, before you grease it with oil - you need to cut it.

    Put the pan in a preheated oven at about 170-180 C and bake it until it gets a saturated golden crust - for about 40-45 minutes.

    In the meantime, start making syrup. It is extremely easy to make - over medium heat put in a saucepan 3 teaspoons of sugar and 1 teaspoon of water and stir until a homogeneous mixture and the sugar melts. Once the sugar has melted, add lemon juice and let it boil a bit to make the syrup a little thicker.

    Once the baklava is baked - as soon as the pan is removed from the oven while still hot, pour warm syrup over it.

    Let the homemade baklava cool completely and enjoy it in the company of warm company and your family! The resulting amount will be enough for a minimum of 10 servings.

    There is an unwritten rule - that the longer the baklava will mature, the tastier and with a rich and deep taste it becomes! And it is easily stored for at least two weeks at room temperature WITHOUT the need to keep in the refrigerator.

    The last activity to complete in the first part of the project was to choose a traditional food, prepare a recipe and cook the dish. What a great activity for children! Kids love helping in the kitchen, especially if they can taste what is being cooked, baked. Our children decided not to cook, but to bake. And they have chosen a traditional sweet dessert called "Honzovy buchty". You would not find a single person in the country who would not try these sweet buns at least once in their life. Everybody loves "buchty".

    Unfortunately, all schools in the Czech Republic have been closed again since mid-December due to a pandemic of Covid (when posting this article, it´s the end of January). Therefore, we did not carry out this activity together at school, but children were asked to bake at home with their families. 

    When the children return to school, we will definitely return to this activity so that we can bake the "buchty" together, taste them and, of course, document everything in the video.
