Healthy meals from Austria

  • ErdäpfelwuzerlIn our cooking lessons we cooked and baked some very healthy and delicious meals.

    Here they are:

     

    Mueslibar (class 3a)

     

    100 g wholemeal flour

    400 g oats

    120 g apple puree

    100 g honey, liquid

    100 g honey, creamy

     

    Mix and stir apple puree with the honey.

    Mix flour with oats or other grains and flatten everything out on a tray.

    Cut into bars when still warm.

    Half of the cereal you can substitute with nuts, raisins or other seeds.

    Bake for 20 minutes in the preheated oven (170° C)

     

    MIXED SALAD

     

    For this salad you can use:

    Tomatoes, cucumbers, peppers, carrots, zucchini, leek, onions, apples, nuts …

     

    Dressing:

    ½ cup of youghurt, ½ cup of sour cream, salt, maple syrup, pepper, herbs, vinegar, oil

    Mix all ingredients well with a whisk.

    Use lettuce to garnish.

     

     

    MIXED BLUE COLESLAW

     

    Red cabbage, onoin, carrots, apples (radishes, peppers, tomatoes..)

     

    Marinade:

    Vinegar, oil, salt, pepper

     

     

    SALAD MARINADE

     

    3 tablespoons of vinegar

    About 1/8 litre of water

    1 teaspoon salt

    1 tablespoon maple syrup

    3 tablespoons oil

     

    Mix vinegar, water, salt and maple syrup in a cup.

    Pour it over the cleaned and washed lettuce.

    Add oil tot he salad just after you add the marinade.

     

    This marinade you can mix to your personal taste with pepper, mustard, onion, garlic and different herbs like basil, parsley, fresh coriander..

     

     

    SALAD DRESSING

     

    Yoghurt, sour cream, mayonnaise (pure or mixed)

     

    Spices: salt, maple syrup, vinegar, lemon juice, pepper, onion, garlic, various herbs, oil (not necessary)

     

    Use high quality and cold pressed oils for the marinade!

     

    In class 4a we created a healthy version of the famous Austrian Apfelstrudel.  Without any sugar and instead of wheat flour we use spelt flour.

     

     

    Applestrudel

     

    Prepare the dough of the strudel:

     

    300 g of fine flour

    1 tsp (teaspoon) of salt

    2 tbs (tablespoons) sunflower oil

    150 - 200 ml lukewarm water

     

    Put all the ingredients in a stainless steel bowl and stir everything with a wooden spoon or plastiv spatula till the dough doesn´t stick to the sides of the bowl.

    Form two equal balls of dough, brush them with oil, cover them and let them rest for half an hour in a warm place.

     

    Filling:

     

    100 g of butter

    100 g of breadcrumbs

    1,5 kg - 2 kg sweet apples

    100 g raisins

    a dash of cinnamon

    melted butter for brushing the dough

     

    Peel apples, remove the core and roughly grate them.

    Roast breadcrumbs in butter.

     

     

    Place the dough on a big cotton cloth (size of a table cloth) and pull it out thinly.

    (Look at the photo!)

    Sprinkle 3/4 of the dough with filling (breadcrumbs, apples, raisins and cinnamon).

    The other quarter you sprinkle with melted butter.

    Fold in the side parts and roll the dough up with the help of the cloth.

    Place it on a tray, laid out with baking paper.

    Brush the strudel with butter and bake it at 180°C for about 30 minutes.
