Preparation for the pumpkin gnocchi with spinach
Preheat oven to 200 degrees. Dice the pumpkin, mix with oil and salt and roast in the oven for half an hour. Puree the roasted pumpkin and mix with flour, parmesan and egg yolk. Season with salt, pepper and nutmeg. Form the dough into a long roll. If the dough is to sticky add more flour. Cut off 2cm long pieces and place in boiling salted water. Take the gnocchi out of the water as son as they float on the top. Slice the garlic, fry in oil and add the spinach and steam with lid closed. Add pepper and salt.
While the pumpkin is in the oven, prepare the dessert.
