3 Medium Roasted Eggplant
1 Dry Onion
2 Tomatoes
3 Roasted Green Peppers
2 Cloves of Roasted Garlic
Salt
1 Soup Spoon Lemon Juice
2 Tablespoons Olive Oil
How to Prepare a Roasted Eggplant Salad?
Eggplant and peppers are roasted well on the barbecue. Peel the roasted eggplant and peppers and cut them into small pieces in a large bowl. Small diced tomatoes and crushed garlic are added. The onion is finely chopped and rubbed with salt, washed and added to the ingredients in the bowl when the water is drained. Salad is served by adding salt, oil and lemon and blending them well.
