4. INTEGRAL BREAD AND PASTA
CRITICAL ASPECTS (WHICH YOU MUST PAY ATTENTION TO):
1. OIL’S EXCESSIVE USE
2. SALT’S USE
3. MAIN USE OF WHITE FLOUR’S BREAD AND PASTA
4. ALCOL AND CALORIES’ EXCESS."
These are Jeremiah Stamler’s words summarizing a two-hours conference about nutrition and Mediterranean diet.
Conference was set in Matera at Chamber of Commerce. ITAS Marconia’s pupils (Raffaella Giorgini, IIA; Simone Ianniello and Simone Lopatriello, IIB; Antonio Mario Panio, IIIB; Marco Farina, IVB) were present with Prof Patrizia Porreca, who’s carrying on two projects: TOGETHER IN EXPO and ETWINNING “OUR DAILY BREAD”. We are very keen on doing these projects about nutritional habits, food and sustainability.
Jeremiah Stamler has been one of first researchers together with Ancel Keys, who demonstrated relationships between a healthy nutrition’s habits (based on Mediterranean diet) and some diseases’ epidemiology (such as ictus or heart stroke): this "research" started in ’50 years, when Stamler decided to live in Pioppi, a very nice place in Southern Italy (Campania), to join with other international doctors (including, Ancel Keys),who wanted to discover why heart attacks had lower uptake in Southern Italy.
During meeting, Stamler highlighted relationships between nutrition type that is adopted and contracting diseases’ frequency (such as ictus and heart attack); frequency become higher if you prefer a diet rich in saturated fat and salt; it fall down if you adopt Mediterranean diet.
Mediterranean diet is not spreadly utilized by Italian people who live in a place where this nutritional habit belongs to an ancient tradition, while is actually widely used by people who “imported” idea:this issue is a priority for Matera City ,which Chamber of Commerce is most important in a project called MEDITERRANEAN DIET;in fact, in collaboration with 10 other Italian Chambers of Commerce, it aims to recover healthy food and habits belonging to local traditions.
During conference was paid attention to local products’ quality that make up Mediterranean diet, which must absolutely be promoted and marketed through European grant aids.
These products, as well as Mediterranean diet in itself, will be protected by introducing a bill which will aim to promote a healthy lifestyle, training and educational projects in collaboration with schools. In addition, it will create a Mediterranean diet’s national brand as a recognition to those who (like restaurants and farms) make use of traditional and quality products.
We can conclude by saying this:
MEDITERRANEAN DIET CAN BE CONSIDERED, FOR ITS HEALTHY AND LONGEVITY EFFECTS, A MEDICINE TO PREVENT AND FIGHT ICTUS AND HEART ATTACKS’ SPREAD.
