    A thistle, by António B. (Year 7 Class C)

Artichoke thistles are used by cheese producers in Serra da Estrela. It is a sustainable procedure to help the coagulation of the curd.

    The sheep

The Bordaleira breed is raised in this area. The milk produced is of very high quality, therefore it is used to make our famous product: cheese.

In the summer, the sheep need the green meadows. So, the shepherds and their dogs take the sheep up the mountains to the summer pastures.
