Ingredients: 300 gr. of chickpea flour 36 gr. of whole grained flour 1 tbl spoon of natural honey (not industrial) 7 dried figs ½ liter boiled and cooled water 1 liter capacity jar with lid 225 gr of (sour dough water) will be taken after draining the figs at 5th day. 6gr salt The Steps of Sourdough Bread: | Preparation: - First, wash the dried figs and cut them as big pieces.
- Drain the figs and put them into the jar. Add ½ boiled and cooled water and honey in jar.
- Mix slowly and put the lid limply not tightly.
- Wait for 5 days and mix slowly everyday without smashing the figs.
- At the end of the 1st day, you will see the figs will float at the top and they will dissolve from water. You will also see bubbles on the top.
- Take 10 gr. of water from this mixture and add 10 gr of white flour into a glass and wait for fermantation in room temperature for 18 hours.
- This fermantation dough should leaven 1/3 proportion.If this test is successful, we are ready to use it for bread making.
- Except from salt, mix all the ingredients, cover the top with a cloth and wait for 30 minutes in room temparature.(autolyse)
- At the end of 30 minutes, add the salt and knead the dough for 15 minutes.
- Put the dough in a greasy cap in a shape you like and wait for a while.
- Bake it and Bon Appetite!
