    “SUGAR IS THE SWEETEST POISON”

     

                Canan Karatay who is a 75 years old Turkish professor has warned the people about the consumption of sugar. In Turkey, her explanations and researches create great reactions both in public and in medical world. She has severe warnings of not consuming industrial foods and sugar, so some companies get angry with her explanations.

                Canan Karatay points out that human body functions so scrumptiously that it immediately takes precautions against sugar so that tissues and organs won’t be damaged severely. Additionally, she adds that sugar intake gives harm so many organs and tissues such as heart, eye, ear, nose, neck and brain. Human organism knows that sugar should be kept far from body, so pancreas releases insulin hormones when a person consumes sugar. Insulin hormones have a function of transforming circus sugar molecules to the most dangerous blood fat named as “triglyceride”. She further points out that too much sugar intake leads to obesity and then cancer. It is stated that sugar has an effect of  cultivating or impowering cancerous cells. Human body wants more and more sugar because it creates a kind of dependency in our brains. So, “sugar is the sweetest poison”.

                She tells that all industrial processed foods, fruit juices,  natural juice of some fruits are harmful for our body. She even states that the fruits sold in the markets are harmful because they are full of chemicals and injected hormones. She wants people to go villages and use natural fruits cultivated without using any chemicals. She humorously advices us to eat wormy fruits which will be a clue for us to understand if a fruit is organic or not. She insists of consuming olive oil and oil itself as a fruit. However, they shouldn’t be processed or refined.

    A Miraculous Food Group: Leguminous Plants

     

                In her article “A Miraculous Food Group: Leguminous Plants”, a Turkish nutritionist Zühal AYNACI BAYEL, points out that leguminous plants such as chick-pea, bean, green peas, black eyed pea and lentil have high protein value if they are consumed in a right way. They have the ability to store atmospheric nitrogen in their roots, so they enrich the soil. They generally have unsaturated fatty asid. Soybeans are the richest in fat when compared to other legumes. The composition of legumes includes  carbohydrate, protein and pulps. The grains of the legumes have cellulose outside and starch inside.  

    The mainly benefits of the legumes:

    • They are rich in magnesium, iron, zinc, calcium and vitamin “B” and “B12”. Additionally, they have thiamin, riboflavin, nicotinic asid, folic acid and vitamin “E”.
    • They balance the glucose in blood.
    • They prevent quick rise of the blood sugar level as they are digested slowly. Therefore, legume consumption is very useful for diabetics.
    • Scientific researches have proved that “riboflavin” in legumes has an effect of preventing dissemination of cancerous cells. Pulps of the legumes balance large intestine flora and by aggravating the revival of the cancerous cells.
    • They decrease the cholesterol level in blood which protects heart.
    • They are low in calories and they also make us feel not to be hungry for a long time. Therefore, they help losing weight in diets.
    • As they don’t have gluten, people suffering from celiac disease can consume easily.

                In the light of this article, we have made sourdough bread and kneaded the dough with legume flour such as chickpea and bean as the Turkish team. Our Turkish people consume white bread too much so we have tried to find a healthier alternative. Our yeast is made from banana and fig fruits.
