    Ingredients For the dough
     
    500g/1lb 2oz strong white flour
    50g/2oz caster sugar
    40g/1½oz unsalted butter
    2 free-range eggs
    2 x 7g sachets instant yeast
    10g/¼oz salt
    150ml/5fl oz warm milk
    130ml/4½fl oz water
     

    The Greek custom for “Tsiknopempti”.

    Fat Thursday (Tsiknopempti) is the most special day of the second week of Triodion (the three-week period before Easter Fast), during which, according to customs, large quantities of meat are grilled at homes and taverns, filling the air with smell of “tsikna” (the smell of scorched meat). People wear costumes, have fun, eat and drink wine. This feast takes place on a Thursday (Pempti) because according to the Christian religion, Wednesdays and Fridays are fast days. After fat Thursday the great carnival follows.
