    We introduce to you our typical meal "Roast pork with dumplings and cabbage"

           

     

         1. Serve the meat, pepper, sprinkle with caraway and spread garlic from all sides. Put the onion in the casserole and spread it into the baking dish, top the neck, add the lard, pour 100-150 ml of hot water and bake in the oven preheated to 160 ° C until softened for about two and a half hours.

         2. Make cabbage. Spoon (stick lure) and sharpen with a sharp knife. Put the lard in a pot, add the bacon, and sprinkle the onion when it starts to splash. Bake and stir the cabbage and caraway after a few minutes, pour it in a bowl and bring to boil. Add sugar and salt to taste - cabbage should have a more sweet taste. Boil for fifteen minutes. Then flush with flour and cook again for about fifteen minutes on a gentle flame.

         3. Let go of dumplings. Flour yeast into flour, add egg, egg yolks and salt, and make a loaf of dough with milk. Allow for a forty-five minutes to rise. Cut the balls on the cubes, sprinkle with the melted butter and stir into the dough. From the dough, make two cones, put them in boiling salted water and cook for twenty to twenty-five minutes (turn brown dumplings in half). Remove the dumplings and pierce the fork to make steam. Finally, cut the thread.

    What You'll Need

    • For the Filling:1/4 pound ground beef,1 small onion (finely chopped),1/3 cup walnuts (halves, or shelled pistachios; ground),1/2 teaspoon salt,1/2 teaspoon black pepper,1/2 teaspoon paprika,1/2 teaspoon hot red pepper flakes
    • For the Case:1/3 cup bulgur (fine),1 tablespoon ground beef,1/2 teaspoon black pepper,1/2 teaspoon salt,1/4 cup potato (mashed),1/2 egg (beaten),1 small onion (grated),3–4 cups sunflower oil (or other light oil; amount needed for frying)
    • Garnish: parsley (fresh, Italian)
    • How to Make It

      Make the Filling

      1. In a small skillet, fry 1/4 pound ground beef until just cooked. Add the onion and continue to stir until the onion softens.
      2. Add the ground nuts, salt, black pepper, and hot red pepper flakes and continue to sauté. When all the flavors have combined, remove the pan from the heat and let it rest.

      Make the Case

      1. In a large mixing bowl, combine the bulgur, ground beef, black pepper, salt, potato, egg, and onion. Knead together for several minutes to form a dough.
      1. Break off walnut-size pieces of the dough and roll them into balls.
      2. With your index finger, push some of the meat and nut filling into the center of the dough and close the end. Shape the meatballs to be narrower at the ends and thicker in the middle in a kind of spindle or football shape.
      3. In a large skillet, heat a generous amount of oil. Fry the meatballs evenly on all sides until dark golden-brown. Place on paper towels to drain.
      4. Serve piping hot. Garnish with fresh Italian parsley and serve with a dipping sauce of plain yogurt mixed with grated cucumber and fresh dill.
