In this project, we intend to explore gastronomy and its relationship with the culture of a region, promoting dynamics that allow expanding knowledge about the cultural, social and health and well-being importance of the Mediterranean diet. As olive oil is one of the main ingredients of the Mediterranean diet, we will investigate the olive varieties responsible for the production of olive oil with a protected designation of origin (DOP) and we will analyze the various regional oils with a protected designation of origin (DOP).
