    POLAND:  a video of how to make "ruskie pierogi". Pierogi are an important part of Polish culture and cuisine, they are considered to be our national dish. This type of pierogi is filled with curd cheese, sheep milk cheese, boiled and minced potatoes and fried onions and is called "ruskie pierogi", which literally means "Ruthenian pierogi" ( not Russian, they have nothing to do with Russia where this type of pierogi is little known).

                                        THE MANY FACES OF POLISH CABBAGE

    Cabbage, in Polish "kapusta" is a very popular vegatable in Polish cuisine. In fact, it is the main ingredients of many dishes.  Kapusta can be thick, like mashed potatoes, or runny, like a soup. It could be thickened with flour, or not. It could be seasoned with paprika, or bay, or dill, or sugar, or just simply salt and pepper. It could include tomatoes, potatoes, mushrooms, onions, or some form of pork.  Some cooks use sauerkraut as the base for their kapusta, while others use a mixture of half sauerkraut and half fresh cabbage.
